The Best Sweet Potato Souffle

Sick of the same old canned yams with marshmellows on top?  Elevate your sweet potato experience with this deliciious souffle recipe!

 

Ingredients

  • 1 Stick of Butter (room temp)
  • 5 medium sweet potato
  • 1/2 cup sugar
  • 1 1/2 tsp vanilla extract
  • 1/2 Cup of Milk
  • pinch of salt
  • TOPPING

  • 1 cup of chopped pecans
  • 1 cup of brown sugar
  • 1/2 cup of flour
  • 1/2 stick of butter (softened)

Method

Step 1

For the Souffle: Poke the sweet potatoes with a fork and bake on a sheet for an hour or when they become soft. When they are cool enough to handle, peel the and place them in a large mixing bowl . Mash until smooth. Add the eggs, sugar, butter, vanilla, milk and salt. Mix well using a hand mixer and pour the mixture into a baking dish.

Step 2

For the Topping: in a mixing bowl combine the pecans, brown sugar, flour and butter until thoroughly mixed. Spread the mixture on top of the souffle. Bake it until lightly browse, about 40 minutes.
