Who doesn’t love mashed potatoes?  Here is the quick and easy way to get perfect mashed potatoes.  The key is adding the potatoes in cold water and slowly bring it up to a boil…and actually using a potato masher.  If you are using a hand mixer, stop it right now!  Over working your potatoes will turn it gummy and won’t be good.

  • 1 1/2 lbs of Yukon Gold Potatoes
  • 1/2 tsp Salt
  • 4 tbsp heavy cream
  • 4 tbsp of butter
  • 1 tbsp milk ( or more )
  • Salt and pepper to taste
  • 1 tbsp sour cream
  • chopped chives for garnish

Step 1

Cover peeled and cut potatoes with cold salted water. Turn the heat to high and broil to a boil, reduce the heat to low to maintain a simmer and cover. Cook for about 15 -20 minutes or until easily poked through with a fork.

Step 2

In a small bowl, add the cream and butter and microwave just until the better has melted.

Step 3

Drain the potatoes and place in a large bowl, pour in the sour cream, heated cream and butter and mash the potatoes with the masher.

Step 4

Add milk and mash until the potatoes are smooth. Start with a little milk at a time and add more to achieve the consistency you like. Don't over beat otherwise the potatoes will come out gluey. Add salt and pepper to taste

Step 5

Plate the mashed potatoes in a serving bowl, finish it off with a slab of butter on top sprinkle with chopped chives.
