Patongko | Chinese Crullers | Cha Kuay | Chinese Fried Breadsticks

This was a favorite of mine growing up and still is!  Who doesn’t love fried bread.  Crispy and crunchy on the outside, and light and fluffy on the inside.  Enjoy with your favorite hot beverage or soup.


  • 4 cups of self rising flour
  • 1 packet of active dry yeast
  • 2 cups of Milk
  • 1 tbsp oil
  • 1/2 cup of water


Step 1

Mix the yeast in a half cup warm water. In a bowl ,mix in the flour, milk, oil and the yeast water and mix well to form the dough. Cover it and let it rise for 1-2 hours.

Step 2

After the the dough has risen. Take a handful of dough and form it into an oblonged shape that is a quarter inch high. Cut into even strips the short way. The individual pieces should approx. measure 1in x 3in x .5 inch Dip a chopstick on water and make long dentations lengthwise on each piece. Take the two piece and put them together making sure the two wet dents are facing eachother and touching. take the other side of the the dry chopstick and make a long dentation on one side of the piece to lock the two pieces of dough together. Stretch both pieces and drop it in hot oil. Turn the dough ofter in the oil to achieve even browning.

Step 3

Note: Make sure the oil is not too hot or it will burn. Fry at 325F or a little less than that. Using a wok works well for this type of frying.
