General Tso’s Chicken is a popular chinese dish which offers a sweet, sour and spicy notes that is perfect over a bed of white jasmine rice.  Give this popular dish a try and impress your company at your next gathering!

Ingredients

  • Base Sauce Ingredients
  • 1/3 cup Oyster Sauce
  • ½ cup Cooking Wine
  • 2 tbsp. Hoisin Sauce 1 cup Light soy sauce
  • 1 tbsp. Dark Soy Sauce
  • 1/3 cup sugar
  • 1 tbsp. minced ginger
  • 3-4 roots of Green Onion
  • 2-3 tbsp. minced garlic
  • General Tso's Sauce Ingredients
  • 2 cup sugar1 cup vinegar
  • 3 tbsp. chili garlic sauce or Siracha
  • ½ tbsp.. sesame oil
  • 1 tbsp. green onion
  • 1 tbsp. minced garlic
  • 1 tbsp. Vegetable Oil
  • Meat and Batter Ingredients
  • 1 lbs. Chicken thighs or Breast (1 inch cubes)
  • ½ tbsp. salt
  • 1 tsp White Pepper
  • ½ tbsp. Garlic powder
  • 1/8 cup white wine
  • 1 egg
  • 1 tsp Baking Soda
  • 1/3 cup Cornstarch
  • 2 tbsp. Vegetable Oil

Method

Step 1

Make the Base sauce by combining all the ingredients in a bowl and set aside. Make the General Tso’s Sauce by combining all the ingredients in a separate bowl.

Step 2

Combine the General Tso’s sauce into the Base sauce and set aside. Combine the all the ingredients for the Meat and Batter and mix well. For best results, do this step ahead of time and let it marinade overnight.

Step 3

Deep fry the chicken pieces in hot oil until golden brown. For extra crispiness, fry the batch for 3-4 minute, remove from oil, wait a couple of minutes, and then fry again until golden brown.

Step 4

Prepare a sauce thickener using 1 tbsp. cornstarch with 2 tbsp. water and mix well into a small bowl. Set aside.

Step 5

In a hot wok, add 1-1 ½ cups of sauce (depending on how much you like) and add the sauce thickener and mix well. After the sauce thickens, add the chicken pieces and stir for about 30 seconds to a minute. Add 1 tsp of sesame oil to finish it off. Plate the dish and garnish with green onion. Serve with white rice.
